Leftover Corn Beef Egg Scramble

Got leftovers? Make a corn beef breakfast scramble.

  • 1 cup Leftover Corn Beef, shredded
  • 6 Eggs
  • ¼ cup Onion, chopped
  • Light Shredded Cheddar Cheese, to taste
  • 1 tbsp Olive Oil
  1. Add the Olive Oil to your frying pan.
  2. Chop the onions and add to the pan.
  3. Shred the Corn Beef, add into pan.
  4. Sauté for 5 minutes.
  5. Add the eggs and scramble.
  6. Cook until they are done, about 10 minutes.
  7. Add the shredded cheese about 2 minutes before the eggs are ready.
Use as many eggs as you need for the amount of people that are eating. Same with the cheese, ¼-1cup, depending how cheesy you like it. Serve with toast.
