Perfect Roasted Chicken
How to make homemade poultry seasoning for roasted chicken.

  • 2 tsp thyme
  • 2 tsp rosemary
  • 2 tsp oregano
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp marjoram
  • ½ tsp sage
  • salt and pepper to taste
  • olive oil
  • 1-2 lemons
  • 1 yellow onion
  • white wine (optional)
  1. In a bowl, combine your spice mixture (thyme, rosemary, oregano, Italian seasoning, garlic powder, marjoram, and sage) and set it aside.
  2. Drizzle some olive oil on the chicken and rub it over the entire surface, season with salt and pepper.
  3. Then drizzle the juice of a half a lemon over the top of the chicken.
  4. Cover the chicken with about half of your spice mixture (more or less depending on your preference).
  5. Stuff the cavity with half of an onion cut in quarters and one lemon cut in half.
  6. In the bottom of the roasting pan, add a cup of white wine and a cup of water, put any remaining onion and lemon in the roasting pan.
  7. Cook at 400ºF for 30 minutes.
  8. Turn the oven down to 350 and cook until the chicken reaches an internal 175ºF.
This spice mixture also works well with quartered red potatoes drizzled with olive oil. Roast for 30 minutes (depending on size) along with the chicken and dinner is done.
