Feta and Mushroom Stuffed Zucchini
 
 
This feta and mushroom stuffed zucchini is as delicious as it is healthy!

Ingredients
  • 2 Zucchini, halved lengthwise
  • ¼ cup chopped Onion
  • 2 cloves Garlic, minced
  • 1 Portobello mushroom cap, chopped
  • ¼ cup chopped Tomato
  • ¼ crumbled Feta cheese
  • 1 tsp Olive Oil
Instructions
  1. Preheat oven to 375º F.
  2. Cut zucchini in half, lengthwise, and scoop out the filling with a spoon until each half looks like a canoe.
  3. Add olive oil to a heated skillet and sauté onions, mushrooms, and zucchini flesh. Add the garlic once filling is starting to soften.
  4. Continue to sauté until liquids have evaporated and onions are translucent.
  5. Remove from heat and stir in feta and tomatoes.
  6. Add the mixture back into the hollowed out zucchini peels and place on a baking sheet.
  7. Bake for 30 minutes.
Notes
Walnuts also make a nice addition to this filling.
