This 6-ingredient recipe combines chicken with salsa, dijon mustard, lime juice, and avocado oil for a flavorful dish with a Mexican-Californian flare.

Ingredients
  • 2 lbs frozen chicken tenderloins
  • 2 tbsp Dijon mustard
  • 2 cups bottled salsa
  • 2 tsp avocado oil
  • Juice of 1 lime*
  • Small onion, sliced
Instructions
  1. Pour the avocado oil in the bottom of the Crock Pot to coat.
  2. Slice the onions and layer them to cover the bottom of the Crock Pot.
  3. Add the Dijon mustard over the onions.
  4. Place the washed, raw chicken tenderloins in the Crock Pot.
  5. Cover with salsa.
  6. Sprinkle with the juice of one lime.
  7. Cover and simmer on low for 6 hours.
  8. Serve with brown rice and avocado chunks.
Notes
Tip: To easily squeeze the lime juice, roll the lime on the countertop for about a minute, all sides, then quarter. The juice comes right out!
