Baked "Fried" Chicken Tenderloins

These chicken tenderloins are cooked entirely in the oven but they taste and look just like fried chicken.

Serves: 12 tenderloins
Ingredients
  • 1 lb chicken tenderloins, thawed
  • 1 egg, beaten
  • ½ cup bread flour
  • ½ cup bread crumbs (we use stale bread and crumble it)
  • 1 tbsp Mrs. Dash Garlic & Italian Herb Seasoning
  • Light Canola Oil Cooking Spray
Instructions
  1. In a bowl, beat the egg.
  2. Spread flour on a plate.
  3. Mix bread crumbs and seasoning on a different plate and spread.
  4. Dredge chicken tenderloin in egg, then flour, back in egg, then bread crumb mixture. Repeat with each tenderloin and place on a separate plate.
  5. Place the plate of breaded tenderloins in the freezer for 20 minutes to allow the breading to set.
  6. Preheat oven to 375º.
  7. Spray a thin layer of the cooking spray in the bottom of a glass baking dish.
  8. Remove tenderloins from freezer and place in a single layer in your baking dish.
  9. Spray the tops of the chicken with a thin layer of the cooking spray.
  10. Bake at 375º for 15 minutes, then spray another thin layer of cooking spray on top of the tenderloins and continue baking for an additional 5-10 minutes depending on your oven.
