Grilled Stuffed Portobello Mushrooms

  • 2 Large Portobello Mushrooms
  • 1 Green Pepper
  • 1 Red Pepper
  • 1 Onion
  • 4 pieces sprouted bread
  • 1 tbsp Olive Oil
  • ¼ cup Low Fat Mozzarella Cheese
  • Fresh Parmesan to taste
  1. Wash your mushrooms and scoop out the middle very carefully.
  2. Chop your peppers and onions, and sauté until tender.
  3. In a mixing bowl, combine vegetables with shredded pieces of sprouted bread and mozzarella cheese.
  4. Fill the mushroom caps and sprinkle with parmesan cheese.
  5. Cook on grill over low heat for approximately 30 minutes.
