Summer Berry Kale and Quinoa Salad

Serves: 14 servings
- 2 bags (or 20 ounces) shredded Tuscan kale
- 2 cups cooked quinoa
- 1 cup raspberries
- ½ cup blueberries
- 1 cup blackberries
- ½ chopped and shelled pistachios
- 1 cup feta cheese
- Juice of 2 lemons
- 1 ½ tablespoons honey
- 2 ½ tablespoons olive oil
- 1 clove garlic, roughly chopped
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- Cook quinoa according to package directions.
- In a large bowl combine the kale, quinoa, berries, pistachios, and feta cheese.
- Add the dressing ingredients to a blender and mix until smooth, or whisk the ingredients in a bowl.
- Pour the dressing over the salad and toss to combine.
