Summer Berry Kale and Quinoa Salad

Ingredients
Salad
  • 2 bags (or 20 ounces) shredded Tuscan kale
  • 2 cups cooked quinoa
  • 1 cup raspberries
  • ½ cup blueberries
  • 1 cup blackberries
  • ½ chopped and shelled pistachios
  • 1 cup feta cheese
Dressing
  • Juice of 2 lemons
  • 1 ½ tablespoons honey
  • 2 ½ tablespoons olive oil
  • 1 clove garlic, roughly chopped
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
Instructions
  1. Cook quinoa according to package directions.
  2. In a large bowl combine the kale, quinoa, berries, pistachios, and feta cheese.
  3. Add the dressing ingredients to a blender and mix until smooth, or whisk the ingredients in a bowl.
  4. Pour the dressing over the salad and toss to combine.
