Peach, Pear, and Apple Cobbler with Oatmeal Crumble

Ingredients
  • For the Flaky Pie Crust:
  • 2 cups all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon sea salt or Kosher salt
  • ½ teaspoon baking powder
  • 3 tablespoons granulated white sugar
  • 4 ounces cream cheese
  • 2 tablespoons coconut oil
  • 12 tablespoons unsalted butter, (1½ sticks) cold and grated
  • ¼ cup to 1⁄2 cup ice water
  • For the Peach, Pear, and Apple Filling:
  • 2 large cans of sliced peaches in heavy syrup
  • 2 Red Pears, peeled and cut into 1" cubes
  • 2 Granny Smith Green Apples, peeled and cut into 1" cubes
  • ½ cup of superfine sugar
  • 2 tablespoons all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon vanilla
  • For the Oatmeal Bourbon Crumble:
  • 1 cup chopped pecans
  • 1 cup rolled oats
  • ¾ stick unsalted butter
  • ½ teaspoon sea salt or Kosher salt
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 2 tablespoons Bourbon
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • For the Egg Wash:
  • 1 large room temperature egg
  • 1 tablespoon of heavy cream
  • 1 tablespoon of water
Instructions
  1. For the Flaky Crust:
  2. Preheat oven to 350ºF.
  3. Using a box grater, prepare the butter and place in the refrigerator while you prepare the flour mixture. Place the dry ingredients in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter, cream cheese, and coconut oil. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Place on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. For the Fruit Filling:
  5. In a large bowl, add all ingredients, and combine thoroughly.
  6. For the Oatmeal Bourbon Crumble:
  7. To make the topping, melt butter in a large skillet on medium heat, combine the flour, sugars, salt, oatmeal, and walnuts in a bowl and mix well, then slowly add mixture to melted butter. Stir constantly for 5-10 minutes. Set aside.
  8. For the Egg Wash:
  9. Combine in a small bowl and beat well, set aside.
  10. To Bake the Cobbler:
  11. If using a double crust, add the the bottom crust, brush with egg wash and bake for 15 minutes until golden brown. Remove from the oven and spoon in the mixed fruit mixture. Top with the remaining dough and brush with egg wash and melted, unsalted butter.
  12. Scatter oatmeal crumble and place dish in the oven on the center rack. Bake at 350ºF for 1 hour. If the oatmeal crumble is not brown, set oven to broil and cook until the oatmeal crumble is golden brown.
