Tis the season for long evenings spent with friends and family in the backyard with delicious grilled food, cold beer, and hand-held desserts. It’s my favorite time of year!
While I absolutely love to cook, I get rather impatient having to wait for things to bake. I think that this is why I love “bar” desserts so much. Chocolate chip cookie bars, apple pie bars, strawberry cream cheese bars, etc.; all of your favorite desserts in simple bar form means no need to bake individual pans. During the summer months, this is key to minimizing bake time and keeping your house cool. There’s no need to keep that oven running unnecessarily when its 90+ degrees outside.
Easy Cherry Pie Bars Recipe
For this particular recipe, there is no need to wait for this pie crust to chill in order to roll. Simply press into the pan, pour the filling, add a few dollops of extra dough, and that’s it. It is literally in the oven within 15 minutes of starting the recipe! What’s even better is that they freeze beautifully. Simply wrap them tightly in plastic wrap and store in an airtight container for up to one month. Take them out about three hours before serving and they will be as delicious as the day you made them. Baking for a crowd? This recipe is perfect for that too. Depending on the size that you cut the bars, it can make up to 30 servings.

Ingredients
- 1 cup butter, softened
- 1 1/2 cups sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon salt
- 2 cans cherry pie filling (21 ounce cans each)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
- Preheat oven to 350ºF.
- Grease or line a 15x10 inch jelly roll pan.
- In a large bowl, beat butter and sugar until combined.
- Add eggs, one at a time, mixing thoroughly.
- Stir in vanilla.
- Gradually add flour and salt, stirring until combined.
- Press about 2/3 of the crust dough into the bottom of the jelly roll pan.
- Spread cherry pie filling over crust dough.
- Finally, drop remaining dough by teaspoonfuls over filling.
- Bake 35-40 minutes or until golden brown.
- To make the glaze, whisk together powdered sugar, vanilla, and milk until smooth.
- Drizzle over bars.
- Slice bars and serve!
