Last spring, I was constantly feeling bloated, sluggish, and just plain gross every single time I consumed dairy. This was a real buzzkill to me, because I love cheese and ice cream. Who doesn’t, right? But in an effort to put my health first, I began weaning it out of my diet just to see what happened. The results just within the first two weeks were incredible – I felt more like “me” again, and vowed to keep my dairy intake in check. One of the first things I did was create modifications for all of my favorite recipes. While I haven’t given up dairy entirely, some of my modified recipes are so good I actually prefer them!
Dairy Free One Pot Fettuccine Alfredo Recipe
At the top of my favorites list is this Dairy Free One Pot Fettuccine Alfredo; what’s not to love about a hearty meal that can be prepped and made all in one pot?
The problem was that it involved multiple types of dairy, so I made it my mission to find substitutes that still tasted delicious. I can proudly say that with a little bit of trial and error, I’ve arrived at a true dinner winner!
Ingredients
- 3 cloves of garlic, chopped
- 3 tbsp olive oil
- 2 tbsp soybean margarine
- 1.5 cans full fat coconut milk
- 1 box fettuccine noodles
- 1 cup dairy-free Parmesan, shredded
- parsley to garnish
Instructions
- Add the garlic and olive oil into your sauté pan over medium heat until aromatic.
- When aromatic, add the coconut milk, margarine, and noodles to the pan.
- Bring to a boil for 1-2 minutes, then reduce heat.
- Slowly mix in the Parmesan cheese while mixture simmers.
- Noodles will be cooked and sauce will be creamy in about 20 minutes.
- Garnish with fresh parsley and serve immediately.

Home Chef Tip: This meal is delicious and filling on its own, but adding roasted vegetables, like broccoli or squash, and mixing them in prior to serving brings this dish to a new level.
If you’re used to a very thick, cheesy Alfredo, I don’t want you to be disappointed – this recipe is not where you will find such a sauce. That said, my cheese-loving husband didn’t even realize the meal was dairy free and went back for seconds the first time I made it!
My sauce recipe lightly coats the pasta and gives a rich, salty flavor to this meal that the whole family can enjoy. The best part? There’s only one pot to clean later!
