The slow cooker has been a friend of mine for a couple of months now. Since I received it as a gift for Mother’s Day, I keep discovering new and interesting recipes. It amazes me how versatile it is and how many different recipes you can make in it.
Recently, I discovered a recipe that takes chicken up a notch. It is a slow cooker creamy chicken, that is so simple yet is packed with warm and comforting flavors.
This slow cooker chicken burger with grilled pineapple is extraordinary. When you combine cream cheese, diced tomatoes, and a blend of spices that intensify the deliciousness of a meat, you automatically set the course for a fool-proof chicken that will cheer you up and make your tummy happy.
I highly recommend using smoked paprika for flavor in your recipes. This is a spice I discovered just recently. As soon as I smelled its flavor, I immediately fell in love with this aromatic spice. It adds such an unexpected dimension to even the simplest of dishes.
Home Chef Tip: This recipe can also be cooked on a stove top and in the oven. Preheat the oven to 400F. Season chicken breasts with salt and pepper, drizzle with 2 tablespoon of olive oil, cover with parchment paper to prevent from drying out. Bake for 45 minutes. Using 2 forks, shred the chicken. On a sauté pan, combine chicken, spices, cream cheese and diced tomatoes. Cook on a medium low heat for 10-15 minutes until cheese has melted.
Ingredients
- 2 chicken breast, skinless, boneless
- 6 oz cream cheese
- 1 can diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 6 pretzel buns
- 9 pineapple rings
- 9 singles cheddar cheese
- 1 tomato, thinly sliced
- 6 lettuce leaves
Instructions
- In a slow cooker combine first 7 ingredients. Cook on high for 4 hours.
- Using 2 forks, shred the chicken.
- On a grill pan or on the outdoor grill, grill the pineapple on a medium-high heat. Set aside.
- Cut pretzel bun in half and lightly toast it on a grill.
- Place 1 slice of tomato, lettuce leaves, shredded chicken and cheese on each bun. Top with a few slices of grilled pineapple. Cover with the tops of the buns and serve immediately.
