A cocktail perfect for dinner for 2 or happy hour for 20!

If you followed along with some of my previous posts then you know we are taking a break from big holiday entertaining this year. All my recent recipes – like these Apple Cider Brined Cornish Hens – were created with you and your plus one in mind. Typically we either serve punch or create a drink station for guests to self-serve. Here I wanted to keep this Cranberry Prosecco Aperol Spritzer recipe small, more intimate! The kind of drink you toss together while you graze on snacks.

This 4-ingredient Cranberry Prosecco Aperol Spritzer is a festive twist on a classic cocktail. With the addition of cranberry simple syrup and orange slices, the bold, seasonal flavors of this wine-based cocktail are perfect for holiday entertaining or happy hour!

Cranberry simple syrup is the secret weapon!

Juices can be a real time saver when you are making large batch cocktails, like my Cranberry Tangerine Sparking Punch for example. But in this case, since we are sipping on single-serve cocktails, I would highly recommend using a homemade simple syrup instead. If you are new to simple syrups, PLEASE check out the resources I’ve shared over the last few years. They are simple (ha!) to make and perfect for more than just drinks. What I love most about the cranberry simple syrup is that you make it with orange juice, honey, and rosemary. Not only are these delicious, seasonal flavors, but they really compliment the slightly bitter, citrusy Aperol!

Cranberry Prosecco Aperol Spritzer

Yield: 2 cocktails

Serving Size: 1 cocktail

Cranberry Prosecco Aperol Spritzer

Ingredients

  • 4 1/2 oz Brut Prosecco
  • 2 1/2 oz Aperol
  • 1/2-1 oz cranberry simple syrup
  • 1 oz club soda
  • Optional:
  • Fresh cranberries for garnish, if desired
  • Orange slices for garnish, recommended

Instructions

  1. Pour the Prosecco into an Old Fashioned glass filled with ice.
  2. Add the Aperol and cranberry simple syrup, garnish with fruit.
  3. Top with club soda, serve immediately.

Notes

Home Chef Tip: To make Cranberry Simple Syrup, you need 1 cup fresh cranberries, 1/2 cup water, 1/2 cup fresh orange juice, 1/4 cup honey (adjust for personal taste), and 2 sprigs rosemary. Add all ingredients to a small saucepan. Bring to a low boil, reduce heat, and simmer 10 minutes or until berries burst. Mash berries through a fine mesh strainer placed over a bowl. Store syrup closed in an airtight container in the refrigerator for up to 2 weeks. Reserve fruit for toast or dessert recipes.
