This agua fresca can be done in less than fifteen minutes and it is perfect to serve as a refreshing option during the day, after a workout, or to pair with your meals.
When I was young, my mother used to offer us a fresh fruit agua fresca made daily for lunch time using seasonal ingredients. My mother was very conscious about good nutrition and providing a balanced meal for all of us. Following my mom’s guidelines for a healthy lifestyle, I often prepare drinks like the ones my mom used to make for us, but with a modern twist.
This recipe for Coconut Pineapple Agua Fresca is inspired by the traditional Virgin Piña Colada Mocktail, but it uses coconut water instead of coconut milk which results in a delicious Coconut Pineapple Agua Fresca with less calories that’s sugar free.
- 3 cups of fresh coconut water
- 1 cup of fresh pineapple chunks
- Stevia extract to taste (optional)
- 2 edible flowers
- 2 pineapple triangles
- 2 straws
- Ice
- Pour the coconut water in the blender and add the pineapple chunks.
- Blend to a frothy consistency.
- Add ice cubes to two glasses and serve.
- Decorate with pineapple and edible flowers like organic carnations.
Fresh fruit like the pineapple, also called ananas, has many good nutritional properties like dietary fiber and is an excellent source of antioxidants and vitamin C. Pineapples are from South and Central America and are a tropical fruit found in many dishes of the Caribbean cuisine. This fruit is great for grilling and for making sweet and sour sauces, desserts, and jellies.
And of course coconut water is natural and it is considered a superfood. This water has a nutty and sweet taste. It is reach in potassium and it is a good drink to have after a workout to recover the electrolytes lost while exercising.
