Here’s looking at you! Hello again, this is Sara from Life’s Little Sweets. Imagine these Chocolate Eyeball Halloween Cupcakes at your next Halloween-themed party. They are fun, colorful, and most importantly, sweet and tasty!

I used my favorite go-to chocolate cake recipe for the cupcakes, added some fun, Halloween-themed sprinkles, and got these colorful and spooky candy “eyeballs” to decorate the tops of the cupcakes. I was able to find those in the baking section of my grocery store. The frosting is a versatile, crowd-pleasing, cream cheese frosting which is so easy to make while the cupcakes are baking. By the way, the cupcakes only take 15-20 minutes to bake!

They have a surprise when you slice or bite into them because they have orange-colored, cream cheese frosting on the inside! There’s so many fun details about these cupcakes which make them the perfect Halloween activity.

This Chocolate Eyeball Halloween Cupcakes recipe is very flexible. If you want to simplify it, you can take out some of the steps to save time by having one color of cream cheese frosting or no sprinkles. Simplifying the recipe is helpful if you are short on time and they will still taste great!

Ingredients for Chocolate Eyeball Halloween Cupcakes

Chocolate Cupcakes

  • 1 cup unbleached, all-purpose flour
  • 1 cup granulated white sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon Kosher salt
  • ¾ cup whole or reduced fat milk
  • ⅓ cup canola oil
  • 1 teaspoon vanilla extract
  • 1 large egg

Cream Cheese Frosting Ingredients

  • 8-ounce package of cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 5 cups powdered sugar
  • Yellow food coloring gel (12 drops)
  • Red food coloring gel (4 drops)

Toppings

  • Halloween-themed and black sprinkles
  • “Eyeball” sugar candy (12)
  • Halloween-themed cupcake liners

Chocolate Eyeball Halloween Cupcakes

These Chocolate Eyeball Halloween Cupcakes are the perfect sweet treat for a Halloween-themed party or a fun activity to make with kids. Candy eyeballs, Halloween-themed sprinkles, with orange and white cream cheese frosting make these a special, seasonal dessert.

Ingredients

    Chocolate Cupcakes:
  • 1 cup unbleached, all-purpose flour
  • 1 cup granulated white sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon Kosher salt
  • ¾ cup whole or reduced-fat milk
  • ⅓ cup canola oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Cream Cheese Frosting:
  • 8-ounce package of cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 5 cups powdered sugar
  • Yellow food coloring gel (12 drops)
  • Red food coloring gel (4 drops)
  • Toppings:
  • Halloween-themed and black sprinkles
  • "Eyeball" sugar candy (12)
  • Halloween-themed cupcake liners

Instructions

  1. Preheat your oven to 350ºF. Combine the dry ingredients: flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the vanilla, egg, and oil. Beat with an electric mixer until combined.
  2. Using a 1/4 cup measure, scoop the batter into the cupcake liners. Use a baking spatula to get all of the batter out of the mixing bowl. Sprinkle Halloween-themed sprinkles on the outer edge of the cupcakes. Bake for 15-20 minutes (20 minutes always works best for me). Check for doneness with a toothpick inserted into the middle of the cupcake and it should come out clean.
  3. While the cupcakes are baking, make the cream cheese frosting. Using an electric mixer mix softened cream cheese, softened unsalted butter, vanilla extract, and powdered sugar until smooth. Divide in half, add yellow and red food coloring drops into one bowl until desired orange color is reached. 12 drops of yellow and 4 drops of red works well to make the orange color.
  4. When the cupcakes are done, allow them to cool completely. Cut out a small hole in the middle of each cupcake. Scoop a small amount of the orange frosting into the middle of the cupcakes. Frost the white frosting over the orange and put an eyeball sugar decoration on top. Sprinkle the edges of the white frosting with black sprinkles.Enjoy!

Notes

Home Chef Tip: Sprinkle the cupcake batter with Halloween-themed sprinkles on the outer edge since the middle will be cut out. This will save the amount of sprinkles you use.
