The southwestern part of the country where I live is used to blistering summer temperatures, but lately the entire country has been experiencing a heatwave. Folks are looking for any way to cool down, including what they are eating and drinking.
Lately I have been big on desserts that are inspired by cocktails and cocktails meant to taste like desserts. In my mind the two go hand in hand. Back in May, I made Layered Boozy Milkshakes for SoFabFood that were a real hit. They even ended up in a Better Homes and Garden roundup!
I’ll be featuring a Blackberry Margarita Tart on Thyme for Cocktails soon that is simply delicious. But back to these Boozy Lemon Cream Pie Floats. This one is all my husband, Paul’s fault. I was snacking on my favorite lemon cream sandwich cookies when he came around with a big bowl of melty vanilla ice cream.
I simply could not resist dipping my cookies in the cold creaminess. It was love at first bite! My first thought was to make a lemon cream pie, but there is no way ANY of us want to run the oven in this weather.
So I dumped all those great flavors into a frosty cold mug and the world was right for a few minutes. I had my pie in a glass.
You could absolutely substitute regular carbonated lemonade for the hard soda and make this recipe great for any age. Just keep the sugar content of your soda in mind. You could even use part regular lemonade and top with lemon seltzer. Make it your own and enjoy!

- 2 large glass mugs
- 1 pint vanilla ice cream
- 2 bottles hard lemonade
- Whipped cream for garnish
- 6 lemon cream sandwich cookies, crushed
- Place mugs in freezer for several hours or overnight.
- Place 2 large scoops vanilla ice cream in each mug.
- Carefully fill mugs with hard lemonade.
- Top with whipped cream and crushed cookies.
- Serve immediately.
