What’s your summer drink of choice?

I have never been into lemonade. Just a bunch of lemons and sugar in a glass? No thanks. It was never my summer beverage of choice. It wasn’t refreshing enough for me and was simply too sweet always. Then, on a trip to Colombia, I tried a whole different type of summer refresher that was similar – one that changed my world.

It was coconut limeade. I found out about it while walking around on a free tour of Cartagena. I was by myself so an elderly American couple instantly befriended me and could not stop raving about this refreshing limeade they had been sampling all over the city. They would not stop talking about it so I knew I had to try it immediately. It was amazing. Super refreshing and icy with a strong lime and coconut flavor. I loved it right away and knew I would have to recreate this from scratch in my own kitchen.

Of course, I decided to add some rum to it too, to make it a bit of a party. For this boozy coconut limeade, all you need are limes, coconut milk, ice, rum, and honey. I am sure the stuff I tried in Colombia was made with creamed coconut with a lot of sugar.

My version does not use either of these ingredients. I always use real coconut milk (look for the can with no additives) and sweeten my drinks with honey or maple syrup. No refined sugar needed and no cans of creamed coconut with a whole bunch of additives necessary. I only added one tablespoon of honey because I am quite sensitive to sweet flavors, but you can easily add two or three as needed depending on your sweet preferences.

This boozy coconut limeade just hits the spot for me – it’s perfectly tart and creamy while being icy and refreshing at the same time. This summer, cool down with a glass of this unique summer cocktail!

Boozy Coconut Limeade

Ingredients

  • 1/2 cup lime juice (about 3 limes)
  • 1 cup coconut milk
  • 1-2 cup ice
  • 1-2 tbsp honey
  • 3 oz white rum
  • lime zest, optional for garnish

Instructions

  1. In a blender, combine all the ingredients and blend until smooth. Add more honey as needed until desired sweetness is reached.

Notes

Home Chef Tip: To make this drink non alcoholic and kid friendly, simply omit the rum!
