Our family has a jar of kimchi in the fridge at all times. My husband lived in South Korea for two years before we met, and his love for kimchi must have been contagious. Even our two-year-old loves it! With kimchi as a staple, homemade sushi rolls are a part of our kitchen routine. Here is our quick and easy, go-to Kimchi Sushi Roll recipe!
Simply the Best Kimchi Sushi Roll Recipe
Ingredients
- Sushi Nori (seaweed)
- Sticky rice
- Cucumber
- Carrot
- Chicken
- Kimchi
- Ginger
- Avocado
- Sesame seeds
- Soy sauce (used as a dipping sauce)
- Bamboo mat (optional)
Directions
Make sticky rice and prep your other ingredients. Cucumber, carrot, chicken, ginger, and avocado should be cut into thin strips. If you are using canned chicken, drain it well. If you are using fresh chicken, cook it thoroughly before cutting into thin strips.
Place one sheet of nori on bamboo mat.
Spread a thin layer of rice across the nori. (Too much rice will make it difficult to roll.)
Place your sushi roll fillings in a line, leaving about a one-inch space between the edge of the nori and the fillings. Sprinkle sesame seeds across the rice and fillings.
Using your mat, carefully roll your sushi. Roll up the fillings side first and continue rolling until complete. Wet the edge of the nori, if needed, to help it stay sealed. (Refrigerate until ready to eat.)
Slice your roll into bite-sized pieces with a sharp knife. Serve with soy sauce and extra kimchi and ginger.

Notes
Home Chef Tip: Dampen your fingers by dipping them in a bowl of water before spreading the rice across the nori. Doing so will help the rice not stick to your fingers.
