Nourishing Traditions explains that Beet Kvass is:
“Valuable for its medicinal qualities and as a digestive aid. Beets are loaded with nutrients. One glass morning and night is an excellent blood tonic, promotes regularity, aids digestion, alkalizes the blood, cleanses the liver, and is a good treatment for kidney stones and other ailments.”
Beet Kvass is so easy to make and so healing to the body. If you do not have whey or juice from a fermented vegetable, use Caldwell’s Starter Culture, the original starter culture developed specifically for fermenting vegetables!
Chef Tip: If you do not have probiotic pickle juice, you can double the salt. You will want to leave in a dark area longer, test after 5 days.
- 3 medium size beets
- ¼ cup juice from probiotic pickles
- 1 tablespoon sea salt
- Filtered water
- 2 quart Mason Jars or a glass half gallon jar
- Peel and wash your beets.
- Chop beets into medium size pieces.
- Place beets in bottom of your jars. 1/2 into one jar, 1/2 into another, or all into a half gallon.
- Now add your pickle juice and salt.
- Fill jar with your water.
- Cover with a coffee filter and secure with a rubber band.
- Keep in a dark place for 2 days.
- Place in your refrigerator.
- Drink 4 ounces in the morning and 4 ounces before bed.
