Although the Baked Falafel is the star of this dish, you won’t want to serve it without a fresh and crispy Cucumber-Zucchini Noodle Salad. The flavors combine beautifully for a healthy vegetarian dish that’s out of this world.
Baked Falafel and Cucumber-Zucchini Noodle Salad
Falafel is a deep-fried ball or patty made from ground chickpeas, fava beans, or both. Falafel is a Middle Eastern food often served in a pita or wrapped in a flatbread. The falafel balls are topped with salads, pickled vegetables, hot sauce, and drizzled with tahini-based sauces. Falafel balls may also be eaten alone as a snack or served as part of a meze tray. Falafel is a great replacement for meat and is often found on food trucks across the United States.
For this recipe, we ditched the traditional breads for cucumber and zucchini noodles made with our favorite new kitchen gadget, the Spiralizer. The Spiralizer is your new best friend if you’re looking to ditch heavy carbs like traditional pasta.
To make this recipe super simple for busy weeknights, we made these Falafel balls with a packaged mix from Knorr.

Ingredients
- For the Falafel:
- 1 packet Knorr Falafel Mix
- 1/3 cup water + 2 tbsp
- For the Salad:
- 1 cucumber
- 1/2 zucchini
- Cherry tomatoes
- For the dressing:
- 3 tbsp tahini
- 1 small lemon, zest and juice
- 1 garlic clove, finely minced
- 1 tbsp freshly chopped mint
- 1/4 cup water
Instructions
- Preheat oven to 350ºF.
- Prepare the Falafel according to directions, set mixture aside for 10 minutes.
- After 10 minutes, roll the mixture into small balls.
- Place on a sprayed cookie sheet.
- Bake for 10 minutes, then flip.
- Bake another 10 minutes.
- While the Falafel is baking, prepare your dressing by whisking all ingredients together then set aside.
- Get your Spiralizer out, cut the cucumber and zucchini in half, and chop off the ends so they are flat.
- Spiralize the cucumber and zucchini, place on your plate, and add a few tomatoes and sprigs of mint.
- Place Falafel on top of noodles and add the dressing on top of the Falafel.
