We love everything about this simple and satisfying breakfast. This Baked Egg in Avocado Nest can be ready in 15 to 20 minutes, depending on how you like your yolks. If you’re trying to get yourself into better shape, this is the breakfast for you. This breakfast is a good protein choice, it’s very low in carbs, and it provides you with the good fats your body needs. After the avocado and egg bake up, we love simply adding chopped Roma tomatoes, red onion, and parsley. The parsley brings on a whole new level of flavor and freshness.

What we love about avocados:

  • Avocados have only 160 calories while offering up 2 grams of protein and 15 grams of healthy fats. Although they contain 9 grams of carbs, 7 of those are fiber so this becomes a nice low-carb, plant-based food you can be confident eating.
  • Studies have shown that eating avocado can improve heart disease risk factors.
  • Avocados are high in antioxidants.
  • Avocados are very high in potassium, much more than the banana. This supports healthy blood pressure levels.

Ingredients

  • 1 Avocado
  • 2 Eggs
  • 1 Roma Tomato, chopped
  • 1/4 cup Red Onion, chopped
  • Parsley, chopped

Instructions

  1. Preheat oven to 400ºF.
  2. Cut your avocado lengthwise.
  3. Remove pit.
  4. With a small spoon, scoop out a bit of the avocado and set aside.
  5. Crack an egg into the center of each half of the avocado.
  6. Place on a baking pan in the oven for 15 to 20 minutes, depending on how you like your yolks done.
  7. Once avocados are done, remove from the oven, and top with your fresh chopped ingredients.
  8. Enjoy!
