Oven Fried Chicken that looks and tastes like traditional fried chicken!
If you’re anything like us, you love fried chicken, but you try to avoid it as much as possible for health reasons or dietary guidelines. If that sounds like you, you’re going to love this Oven Fried Chicken recipe. We love to “cheat” by baking these chicken tenderloins that taste and look just like our favorite fried chicken. Baked entirely in the oven, this baked chicken is perfect for dipping in your favorite sauce, to use in your traditional Chicken Parmesan recipe, or as a sandwich with lettuce and tomato on a whole wheat thin bun. You’ll fool your family and friends into thinking it’s fried chicken, but you’ll feel good knowing that you’re serving up a healthier alternative to one of their favorite foods.
- 1 lb chicken tenderloins, thawed
- 1 egg, beaten
- ½ cup bread flour
- ½ cup bread crumbs (we use stale bread and crumble it)
- 1 tbsp Mrs. Dash Garlic & Italian Herb Seasoning
- Light Canola Oil Cooking Spray
- In a bowl, beat the egg.
- Spread flour on a plate.
- Mix bread crumbs and seasoning on a different plate and spread.
- Dredge chicken tenderloin in egg, then flour, back in egg, then bread crumb mixture. Repeat with each tenderloin and place on a separate plate.
- Place the plate of breaded tenderloins in the freezer for 20 minutes to allow the breading to set.
- Preheat oven to 375º.
- Spray a thin layer of the cooking spray in the bottom of a glass baking dish.
- Remove tenderloins from freezer and place in a single layer in your baking dish.
- Spray the tops of the chicken with a thin layer of the cooking spray.
- Bake at 375º for 15 minutes, then spray another thin layer of cooking spray on top of the tenderloins and continue baking for an additional 5-10 minutes depending on your oven.
These baked chicken tenderloins are crispy on the outside and moist and delicious on the inside. Although a spray oil is used in this recipe, since you are using a very small amount and the spray basically bakes off of the chicken in the oven, the oil does not seep into the chicken so this chicken is never greasy and is a much healthier alternative to traditional frying. As an added bonus, these tenderloins are very low in sodium so they’re great for anyone on a heart-healthy diet.
