Fettuccini Alfredo is my absolute favorite meal, and it has been for most of my life. If I could eat it every day I would, but sadly that amount of butter, cream, cheese, and pasta would probably kill me before I turned 30. Instead, I’ve found a way to enjoy my favorite meal more often by making this lightened up 5-Ingredient Zucchini Noodle Alfredo made with spiralized zucchini noodles! I have to admit it’s pretty darn close to the real thing, and you get a hefty serving of veggies with this dish. The best part is it cooks in less than 20 minutes, so it’s an easy weeknight dinner.

You’re just 5 ingredients from this healthier classic!

This healthier classic only contains five ingredients, so that should give you a clue as to how easy it is to make. Because I used “lighter” ingredients, all you need is zucchini, margarine, flour, low-fat milk, and low-fat cheese to make something that tastes great and feels great. I do recommend taking it a step further with a bit of minced garlic, but I’ll leave that to your preferences. Serve alongside warm bread or freshly toasted garlic bread, and you’ll have everyone eating zucchini noodles before they even realize it’s a vegetable.

I often add in chicken to my Zucchini Alfredo for protein as well as texture. Zucchini noodles are a great alternative to pasta, but let’s be honest, it’s not the same. I still indulge in my full-fat pasta version from time to time!

This can also be turned into a gluten-free recipe by replacing the flour with cornstarch if needed, so those with gluten allergies don’t have to miss out on Alfredo. I do love how easy it is to change this recipe to be what I want – whether that’s lighter ingredients, gluten free, or mixing in chicken or spinach for additional flavors.

Cook Time: 10 minutes

Lightened Up 5-Ingredient Zucchini Noodle Alfredo

Ingredients

  • 2 zucchinis, spiralized
  • 3 tbsp margarine
  • 2 tbsp flour
  • 1 cup low-fat milk
  • 1/2 cup low-fat parmesan cheese or blend
  • Salt and pepper to taste, optional

Instructions

  1. In a large skillet, melt the margarine over medium heat.
  2. Whisk in the flour to create a roux, then mix in milk.
  3. Cook for several minutes on med-low heat, whisking often, until thickened to a sauce texture.
  4. Stir in the cheese until melted.
  5. Season with salt and pepper to desired taste.
  6. Add the zucchini noodles and cook until noodles are heated through, about 1 minute.
  7. Serve hot with additional cheese.

Notes

Home Chef Tip: Add about 1 tbsp of minced garlic to the margarine for a bit of extra flavor, and add shredded chicken for more protein!
