This beautiful 4-Ingredient Raspberry Sorbet recipe couldn’t be simpler to make. Made with fresh farmers market finds, the base recipe can be followed to create a variety of flavor combinations!
Summer is finally here. How exciting is that? I feel like I’ve been waiting for this season for months.
Actually, it feels like it’s been years since it hasn’t rained, snowed, or been super cold here in the ‘great north’ (a.k.a. Wisconsin). Today it’s about 70 degrees and sunny, and I just moved the veggie plants I started indoors to the back deck. They’re super happy, and I’m going to transplant them into the garden this weekend, and I have a good feeling they’ll be even happier in there.
I’d say that means it’s summer and summer calls for cold, simple, delicious desserts using fresh, seasonal ingredients like this 4-Ingredient Raspberry Sorbet recipe.
4-Ingredient Raspberry Sorbet Recipe
In addition to all of the veggies that are growing around here, we also have a blueberry plant and a huge strawberry garden. Last year the strawberries were only around for about 2 weeks – and boy were those the best 2 weeks of the summer! I have a good feeling this year the berries will do much better.
Because of that, I’m planning on making 512 different berry recipes, and today’s recipe happens to be Raspberry Sorbet. No, I don’t have a raspberry plant, but what’s great about this recipe is that it’s totally customizable for all other berries and fruits. Go ahead and make it with peach or mango if you want! Any flavor you choose will taste delicious, but let’s take a moment to appreciate how absolutely beautiful this raspberry sorbet is.
Isn’t it lovely? What’s also amazing is this recipe is so simple to throw together and it’s made with only 4 ingredients. It just takes simmering some sugar water and giving the syrup, raspberries, and lemon juice a whirl in the food processor until super smooth.
Ingredients
- ½ cup sugar
- ½ cup water
- 2 ½ cups frozen or fresh raspberries
- 1-2 tsp fresh lemon juice
Instructions
- Combine sugar and water in a small saucepan and bring to a simmer. Cook until sugar has completely dissolved. Remove from the heat, place in a container, and in the fridge until cooled.
- Purée raspberries and ½ cup cold water, simple syrup, and lemon juice in a food processor until very smooth. Add additional cold water, a tablespoon at a time, if mixture is thick.
- Serve immediately.
