20-Minute Weeknight Ratatouille
When I met my husband 13 years ago he didn’t eat a single vegetable. After a few years of dating and now 10 years of marriage, my husband eats vegetables regularly. I like to credit this healthy lifestyle change to an easy vegetable dish my mom often made while growing up, this simple weeknight Ratatouille.
It’s simple, yet flavorful. This dish rotates on our menu at least once a week in our house and everyone devours it, including our five year old twins.
As a busy mom shuffling between after school pick up, soccer practice, and swim lessons, it is hard to carve out time in my day to cook up elaborate gourmet meals. However, mealtime at our house is uninterrupted time for us to chat and be together as a family.
During family meals, not only do we catch up about our day, we also teach our children healthy lifestyle habits.
This is why we love sharing recipes that are quick, easy, and realistic to make with the moms that visit us at Two Came True. We believe that everyone deserves to have delicious weeknight meals that don’t require hours in the kitchen; at least while we are trying to survive this season of life.
It all started many years ago when my husband came over to my parents house for dinner. He was introduced to this Ratatouille side and fell in love! His vegetable eating habits haven’t been the same since. That’s a win in my book! Once you introduce this classic side dish to your family, I’m sure they’ll fall in love too.
Ingredients
- 1 Zucchini
- 1 Yellow Squash
- 1-15 Cherry Tomatoes
- 1 Yellow Onion
- 1 tbsp Butter
- McCormick's Perfect Pinch Vegetable Supreme Seasoning
- Salt and Pepper
- Garlic Salt
- Hidden Valley Ranch Seasoning Mix
Instructions
- Begin by coarsely chopping all of your vegetables and dumping them into a glass baking dish.
- Season generously with your favorite seasonings. About 1 1/2 tsp of each seasoning is sufficient to make the dish flavorful. We included our favorite seasoning choices in the recipe ingredients list.
- Mix the seasoning into the raw vegetables.
- Top with 1 tbsp of butter.
- Cover and place in the microwave for 10-12 minutes. Stir once more before serving.
Notes
Home Chef Tip: To lighten this recipe up, swap out the butter for 1 tbsp of coconut oil! We promise you won't notice the difference and will reap the benefits of the coconut oil.
