Vegetarian Kale Lasagna Plus an Ingredient Hack
Have you ever been craving lasagna and realized you forgot to buy the ricotta cheese? Since it’s happened to us so many times when making this Vegetarian Kale Lasagna, we came up with a great recipe hack that makes this meal even more delicious and healthy. This dish is a great alternative to traditional meaty lasagnas because it’s much lower in fat and it delivers the powerful nutrients from kale as well as a probiotic boost with the help of the hack!
If you forget to buy the ricotta or cottage cheese, substitute greek yogurt instead! You will get a healthier version and a creamy layer in your Vegetarian Kale Lasagna recipe. How does it work?
Ingredient Hack
- Drain a container of greek yogurt to get rid of the liquid.
- Put greek yogurt back in container.
- Stir in one tablespoon of Italian seasoning and one tablespoon of dried chopped onion.
- Layer into your lasagna as per the recipe instructions below.

Ingredients
- 1 package lasagna noodles
- 1 container of Greek yogurt which is now your "ricotta cheese"
- 2 cups Kale, broken into bite sized pieces.
- 1 16 ounce package low fat shredded mozzarella cheese.
- 1 jar of your favorite pasta sauce
- 1 tsp Italian seasoning
- 1 tbsp dried chopped onions
Instructions
- Boil your noodles according to package instructions, then rinse with cold water so you can handle them.
- Spray a non-stick lasagna pan with cooking spray.
- Add 1/2 cup pasta sauce to the bottom of the pan.
- Make three layers; lasagna noodles, Greek yogurt spread on top of noodles, kale, sauce, cheese, then top the layer with your noodles and repeat.
- The last layer you will add the rest of the pasta sauce, then cheese on top.
- Bake for 40 minutes at 350ºF.
Notes
Serve with garlic bread and a side salad.
