These Four Leaf Clover Sandwich Cookies and Peppermint Pin Wheel Cookies are the perfect St. Patrick’s Day Cookies. Flavorful, fun, and simple to make, these cookies are sure to impress any leprechaun.
Sandwich cookies are one my favorite treats to make. I grew up making them with my mother every holiday. The cookies can be filled with jam, chocolate, peppermint, or caramel. St. Patrick’s Day is a holiday that my friends and I really get into. This year, I will be hosting a tea party with all St. Patrick’s Day themed food. For desserts, I will be serving these Four Leaf Clover Sandwich Cookies and Peppermint Pin Wheel Cookies. These cookies are easy, delicious, and festive. The best part about today’s post is that I used the same dough to create two different cookies.
- 2¼ cup of flour
- ½ teaspoon of baking powder
- 2 large egg yolks
- Pinch of salt
- ½ teaspoon of cinnamon
- ¾ cup of confectionary sugar
- 1 cup of unsalted butter
- ½ teaspoon vanilla extract
- ½ cup of corn starch
- Peppermint Extract
- Green Food Coloring
- In a bowl, sift the flour, cornstarch, salt, and baking powder.
- In another large bowl, using an electric mixer, beat the egg yolks, sugar, cinnamon, softened butter, and vanilla extract.
- Reduce the speed to low and add the flour mixture in three portions.
- Once the flour is incorporated, use your hands and form the dough into a disc shape.
- Then, divide the dough into three discs and flatten them.
- Add four to five drops of green food coloring to two of the doughs.
- Then add a drop of peppermint extract.
- Using disposable gloves, knead the color evenly throughout the dough.
- Wrap each dough in a waxed paper and refrigerate for at least 30 minutes to 1 hour.
- Remove the dough from the wax paper and place it onto a floured surface.
- Roll with the rolling pin and leave the dough on the counter.
- Roll the green dough on a different area of the counter.
- Use a spatula to lift the green dough off the counter and lay it on top of the vanilla dough.
- Roll the two sheets of dough together.
- Using a knife, cut 2-inch slices, keeping the circle shape.
- Place slices on a parchment paper lined cookie sheet.
- Place the cookies in a preheated 350ºF oven for 10 - 12 minutes, or until golden around the edges.
- Mix the remaining dough together and roll it out onto a clean surface.
- Using a four leaf cover shape cutter or a similar shape, cut out cookies.
- Transfer the cookies to a baking sheet.
- Place the baking sheet in the fridge for 10 minutes.
- Bake the cookies on 350ºF for 9 - 11 minutes, or until golden brown around the edges.
- After they are done, add jam, peppermint, chocolate, or caramel.
