Smoked Salmon Bites with Mustard Creme Fraiche from Cooking and Beer

- ½ cup crème fraîche (sour cream may be substituted)
- ¼ cup whole grain mustard
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 tsp lemon zest (plus extra for garnish)
- salt and black pepper to taste

- 8 oz thinly-sliced smoked salmon
