Serrano Cucumber Margarita
Years ago in our first home, Patty and I desperately wanted a garden. We had very little room, and the only place to fit a garden was along the side of the house where a row of scraggly hostas had been growing. We dug those out and planted the garden, but it was quite narrow and space was limited. We knew we wanted to grow chili peppers, but what else to grow? One of our first attempts was cucumbers.
Did you know that cucumbers are quite easy to grow? And talk about productive! We had no idea cucumbers would essentially take over our garden and pile up in the house. Those cucumbers grew sideways, into the side of the house, and kept on growing. That year we had boomerang-shaped cucumbers that looked odd but tasted just fine.
The true dilemma at that time was this – what the heck do we do with all these cucumbers? You can only give so many away before the neighbors start flinging them back at you. And “no”, that is not why we grew them in the shape of boomerangs. Patty and I put our heads together and made many a meal, and while we still love cucumbers in a tasty noodle bowl or as the crunchy part of a sandwich, one of our very favorite ways to use them is in a drink.
This is where Patty shines. She’s a creative and talented mixologist, and even though we no longer grow cucumbers, we still pick them up from time to time to incorporate into a summery drink on a warm evening. This Serrano Cucumber Margarita is one of those recipes. With a bit of heat, of course!
Patty’s Perspective: Juicing cucumbers is actually quite easy. Just add them to a blender or food processor and blend away. One large cucumber produces as much juice as a grapefruit, about a cup per large cucumber. That’s a lot of juice! If you’re looking for very fresh flavor in your cocktails, this one will absolutely deliver. The coolness of the cucumber balances the one-two bite of the Tequila-Serrano pairing. We love this combination.
- 1 large cucumber
- 1 lemon
- 2 limes
- 1 small serrano pepper
- 1 tablespoon raw sugar
- 6 ounces white tequila
- 2 ounces triple sec
- 4 ounces lemon-lime soda
- Cayenne pepper and Salt for rim
- Extra serrano slices and cucumber for garnish
- Cube the cucumber and place into a food processor or blender. Squeeze in the lemon and lime juice. Add sugar and blend until smooth.
- Strain through so you only have juice.
- Place the Serrano slices into a cocktail shaker and pour in a few ounces of the juice. Muddle the Serrano peppers to break them down.
- Add the remaining juice and fill with ice. Add tequila and triple sec and shake vigorously.
- Add the lemon-lime soda and shake a bit.
- On a small plate, mix together some cayenne pepper and salt. Rim each glass with the used lime and salt the rims.
- Place ice in the glasses and strain the margarita into each glass.
