I feel no shame. My sweet tooth controls my life. Quite literally, my cravings can make or break my good mood. To say I can be a bit indulgent at times is an understatement.
My obsession with sweets comes along with a sense of improvisation. I find that improvising is such a huge factor in the making of many wonderful culinary creations. Sometimes being low on ingredients and having to work with what you’ve got forces your hand into creating something you might never have. This Salted Caramel Banana Ice Cream Topping is one of my “go-to sweet treats” when I need my sugar fix. I always have bananas in the house as they are my grab and go breakfast most mornings. Using flavorful dark brown sugar, a bit of butter, and salt – this portable fruit turns into an ultimately satisfying dessert that is super fast and easy. It’s a versatile recipe too. It can be easily manipulated by adding your own flair. You could improvise in your own ways like using vanilla, other flavorings, cinnamon, or even chai spices to change up this dessert topping. It’s very similar to a Bananas Foster, minus the liquor and flames, which is more costly and dangerous.
Did I mention this only takes 3 minutes to whip up? How could you possibly go wrong? It’s so right, you might just dive in with a spoon and forget the ice cream even exists. It’s OK though, I’m not judging. I’m guilty of it myself.
The bananas sizzle in the sauté pan, soaking in the salted sugary concoction, while the sugars caramelize to a nutty dark amber color. The more you sauté, the darker the caramel gets. I usually cook them for around three minutes. This gets those delicious nutty notes hidden just inside the caramel. Don’t leave this unattended to avoid a boil over, and also to avoid any passerby getting a sniff of what you’re whipping up. In that case, you might have to share. - 2 bananas, ripe yet firm, cut into slices
- 2 Tablespoons of Unsalted butter
- ¼ cup Dark Brown Sugar
- ½ teaspoon salt
- Melt the butter over medium-high heat.
- Once melted and sizzling, add the brown sugar and salt.
- Once the sugar has melted, add the sliced bananas.
- Sauté over medium heat for approximately 3 minutes, flipping the slices half way through.
- Remove from heat.
- Let cool for a few minutes until just warm.
- Serve warm over ice cream or your favorite dessert.
