Salmon Tacos with Caribbean Slaw
One of our newest obsessions is Salmon Tacos with Caribbean Slaw. We love the spicy salmon that comes right out of your freezer and pops right into your oven. Very simple to prepare in only 30 minutes, this meal is perfect for busy weeknights. The Caribbean Slaw is made with packaged coleslaw, fresh pineapple chunks, greek yogurt, red onion, and coconut flakes for an added sweetness. The pairing of the spicy salmon with the flavorful slaw is absolutely divine. Do your tastebuds a favor, and try this simple dish tonight!
Ingredients
- 1-6 ounce Alaskan Jack's Blackened Heat Rub Keta Salmon, frozen
- 2 flour tortillas
- 1-10 ounce bag Cole Slaw
- 1 cup chopped pineapple
- 1/4 cup chopped red onion
- 1 cup greek yogurt
- 1/2 cup shredded coconut
- Cotija cheese, crumbled
Instructions
- Bake your salmon according to the instructions on the box.
- Mix your slaw and ingredients together in a large bowl. Refrigerate 20 minutes.
- Break the salmon in half and add onto each tortilla.
- Top with your slaw.
- Then sprinkle Cotija cheese on top.
- Add your favorite hot sauce and enjoy.
