If you’re craving Chinese food, but you’re trying to watch your sodium intake, turn to this simple and flavorful recipe for Lower Sodium Sweet & Sour Chicken. The crispy homemade chicken nuggets are coated in a no-sodium batter then fried to perfection and served with lightly cooked bell peppers and pineapple over rice. Whip up a tasty homemade low sodium Sweet & Sour Sauce for dipping and you have a dish that’s better than Chinese takeout without all of the added sodium and MSG. It really doesn’t get much better than that even if you aren’t watching your sodium. Fresh and flavorful, your family will love this simple dish.
- For the Sauce:
- ½ cup low sodium ketchup
- 1 tsp low sodium soy sauce
- ⅓ cup white vinegar
- ½ cup brown sugar
- ¾ cup pineapple juice
- 2 tbsp corn starch
- For the Sweet & Sour Chicken Entrée:
- 2 lbs chicken tenders cut into cubes
- ½ cup bread flour
- ½ cup corn starch
- 1 tsp pepper
- 1 tsp Mrs. Dash Garlic & Herb seasoning
- ½ cup water
- 1 cup olive oil
- 1 red bell pepper, cubed
- 1 cup pineapple chunks
- white rice cooked according to package instructions
- To make the Sweet & Sour Sauce:
- Mix the corn starch and pineapple juice until fully blended in a sauce pan.
- Add in all of the other ingredients and stir thoroughly.
- Bring to a boil over medium high heat, stirring regularly, then reduce heat, and simmer until sauce thickens. About 10-15 minutes.
- To make the Sweet & Sour Chicken:
- Cut chicken into cubes and set aside.
- Mix flour, corn starch, and spices in a mixing bowl, then add the water and stir to batter consistency.
- Put chicken cubes in the bowl and thoroughly cover with batter.
- Heat oil in a large pan on the stovetop.
- Fry chicken until cooked thoroughly, turning occasionally. Juices will be clear and chicken coating will be golden brown.
- Set aside on a paper towel lined plate.
- In the pan, cook the red bell pepper and pineapple chunks for about 5-7 minutes.
- Serve chicken and vegetables over white rice with Sweet & Sour Sauce for dipping.
