Grilled Peach Bruschetta with Creamy Feta and Balsamic ~ Outdoor cooking taken to a whole new, elegant level. Luscious peaches and your favorite baguette grilled together with a creamy feta cheese spread between them, drizzled with balsamic reduction and fresh mint.
GRILLED PEACH BRUSCHETTA WITH CREAMY FETA AND BALSAMIC
While summer hasn’t officially begun, by calendar standards, we are all in summer mode. My daughter has been out of school for nearly three weeks now, we’ve endured our first sunburn of the season, the AC has been kicked on, and my cardigan collection has officially been swapped out for my flip-flop collection.
And of course, the grill has been fired up! So far, I’ve made steaks, hot dogs, chicken, and burgers. That’s not too shabby for a girl who is terrified of lighting the barbecue. But that’s a different story for another day.
A year or so ago, I was at friend’s place for a party and I enjoyed an amazing dessert. A simple yellow cake that was topped with a mixture of grilled stone fruits, and a dollop of whipped cream. Until that point and other than pineapple, I had never had grilled fruit. I was transported immediately. It was one of those dishes that I have filed back in the recesses of my mind to recreate sometime.
When the opportunity arose for me to contribute here on SoFabFood, I had been thinking about peaches and the idea to make this appetizer just came together. Sweet and savory is my favorite combination, more than chocolate and peanut butter. My goal was to create an appetizer that was fun, delicious, but both sweet and savory. Friends, I have succeeded.
The peaches and balsamic reduction give the sweetness I crave. The creamy feta cheese spread gives it the savory notes I wanted. The bread, with it’s slight charred-flavor, was amazing and brought in the smokiness. The mint just brightens the whole bite up.
- 4 oz cream cheese; softened
- 4 oz feta cheese; room temperature
- 4 peaches; halved, pit removed
- ¼ cup extra virgin olive oil +/-
- 1 loaf / 2 mini-loaves baguette
- Balsamic reduction
- 10-15 mint leaves; ribbon cut/chopped
- Bring both the cream cheese and feta to room temperature.
- Using a hand mixer or with a wooden spoon, whip/mix the cheeses together.
- Cover and chill until 30 minutes before ready to use.
- Set out the balsamic reduction, allowing to warm to room temperature if made beforehand.
- Heat grill.
- Clean and halve the peaches, removing the pit.
- Score each half, two lines one direction and then rotate and slice another two lines, intersecting the first two lines.
- Slice the bread on the diagonal to desired thickness.
- Pour the olive oil in a bowl and brush each side of the baguette slices with the oil.
- Once the grill is hot, lower flame to medium and brush the grates with oil to prevent sticking.
- Place the peaches flesh side down on the grill; cook for about 5 minutes, and flip, cooking an additional 5 minutes; remove and set aside.
- Place the bread on the grill and cook for 2 minutes, flip, and cook another 2 minutes; remove and set aside.
- Ribbon cut or chop fresh mint.
- Generously spread the creamy feta over one side of the grilled baguette.
- Slice each peach halve into 4-6 slices (depending on how large the peaches are.) Removing the skin is optional.
- Place a peach slice over the creamy feta.
- Drizzle with balsamic reduction.
- Garnish with fresh mint.
- Enjoy!
While I made this as an appetizer, it honestly could be a meal itself. I know I got plenty full while taste testing…and not complaining one bit. Sadly, the balsamic reduction makes these look less pretty, but all is forgiven when you taste how well it blends with the mint, creamy feta, and grilled peach. A few raised eyebrows were shot at me when I presented my dish, but once those raised eyebrows took that first bite, well, the platter was instantly emptied.
