Grilled Garden Vegetable Turkey Burgers
Whenever the heat goes up and the grill comes out, I have the perfect warm weather recipe. It’s a turkey burger, but it’s not just any turkey burger. It’s the most flavorful, juicy, vegetable-laden turkey burger I have ever had, and I’ve had quite a few. You can slap on ketchup, mustard, cheese, and pickles, or you can just eat it plain. These Garden Vegetable Turkey Burgers have enough flavor to hold their own. It’s not just about what you add on top of the burger, but it’s also what goes in it.
When my husband bought a new grill a few years ago, he began grilling vegetables. We moved from California to western Massachusetts, and we were as impressed with the local produce as we had been out west. We live in the town next door to the Asparagus Capital of the World – Hadley. There are more than 200 acres of Hadley farmland devoted to growing asparagus, or as we call it – “Hadley Grass.” You can eat it steamed, roasted, grilled, sautéed, and even raw, but we love ours grilled best. Paired with local Garden Vegetable Turkey Burgers, it becomes a New England warm weather meal that not only looks and tastes great, but makes you feel great too.
- 1 pound ground turkey - 97% fat free
- 1 cup shredded zucchini
- ½ cup shredded carrots
- ¼ cup diced red pepper
- 3 tbsp chopped parsley
- ½ tsp garlic powder
- ¼ tsp dried dill
- ¼ tsp Old Bay® Seasoning
- ¼ cup soy sauce
- Organic cheddar cheese slices, optional
- Bacon, optional
- mustard
- ketchup
- lettuce
- bacon
- onions
- tomatoes
- buns
- For the asparagus:
- choose firm, bright-green asparagus tips with closed and dry tips
- 4 tbsp olive oil
- parmesan cheese to taste
- For the Burgers:
- Cook the bacon if you like bacon on your burger. Set aside.
- Wash your hands and mix together all the burger ingredients.
- Form into 4-6 patties.
- Brush your grill with cooking oil and heat over medium-high heat.
- Cook burgers for 5-7 minutes until each side is fully-cooked.
- Cut into the burger to check to make sure they're cooked through.
- Serve with your own personal fixings.
- For the Grilled Asparagus:
- Lightly coat with olive oil.
- Season with salt and pepper to taste.
- Grill over high heat for 2-3 minutes.
- Add parmesan cheese last.
You could certainly experiment with different vegetables, but what I loved was the flavor of the red peppers, and the way the zucchini and carrots flowed seamlessly into the mix. I’m someone who needs a lot of vegetables, and I will get creative as to how I eat them. I think most local and seasonal favorites would work, if not all.
You could even put asparagus in the burger!
