Fall might be upon us, but it’s still pretty hot across most of the nation. Don’t give up the fresh flavors of summer just because the season passes when you can still visit your favorite local farmers market and pick up the ingredients to make this simple and refreshing Frozen Mango Lemonade!
Many of us don’t want to fuss with making elaborate recipes so it’s been my goal to come up with simple and fast recipes that are both beautiful and delicious. This is why I love this mango lemonade so much. It takes the beloved sweet and juicy mango that is often times hard to eat because of the large seed in the middle, and transforms it into a refreshing drink.
The riper the mangoes, the better. I often use the mangoes that are too ripe for my taste because when blended, you get a very sweet outcome. All you need to do is chop the mango into small pieces and puree with lemon juice and a sweetener. For a super short cut, you can buy the lemon juice, but I find that freshly-squeezed lemon juice tastes so much better. The sweetener can be honey or a simple syrup. You can even get creative here by using coconut sugar. I made a simple syrup using equal parts of water and white granulated sugar.
Kids will love this lemonade because of the sweetness, but if you want to dress it up and serve it to adults with some booze, then add rum or Moscato to the mix! I also like to garnish the rim with the Mexican seasoning, Tajin. It’s a blend of chili pepper, lime, and salt. The Tajin really enhances the flavor of the fruit all while giving a tangy and spicy kick!
Home Chef Tip: To make this beverage adult friendly, add your choice of rum or Moscato and garnish the rim with Tajin Classic Seasoning.
Ingredients
- 2 cups chopped mango
- 1 cup lemon Juice
- 1 cup water
- 2 cups ice
- 1 cup of sugar
- 1 cup of water
Instructions
- Combine the sugar and water in a medium saucepan.
- Bring to a boil, stirring occasionally, until all the sugar has dissolved. Remove from heat and allow to cool.
- In a blender, purée the mango with 1 cup of water until smooth. Pour the mango through a strainer into your pitcher.
- Stir in the lemon juice and simple syrup, mixing well.
- Add 2 cups of ice to the pitcher and serve.
Notes
1. You can adjust the amount of water added to the lemonade. For a thicker consistency (think smoothie) use less water. 2. Garnish the rim with the fruit of your choice.
