Serrano Cucumber Margarita

Ingredients
  • 1 large cucumber
  • 1 lemon
  • 2 limes
  • 1 small serrano pepper
  • 1 tablespoon raw sugar
  • 6 ounces white tequila
  • 2 ounces triple sec
  • 4 ounces lemon-lime soda
  • Cayenne pepper and Salt for rim
  • Extra serrano slices and cucumber for garnish
Instructions
  1. Cube the cucumber and place into a food processor or blender. Squeeze in the lemon and lime juice. Add sugar and blend until smooth.
  2. Strain through so you only have juice.
  3. Place the Serrano slices into a cocktail shaker and pour in a few ounces of the juice. Muddle the Serrano peppers to break them down.
  4. Add the remaining juice and fill with ice. Add tequila and triple sec and shake vigorously.
  5. Add the lemon-lime soda and shake a bit.
  6. On a small plate, mix together some cayenne pepper and salt. Rim each glass with the used lime and salt the rims.
  7. Place ice in the glasses and strain the margarita into each glass.
