Easy Tilapia with Olives and Peppers

- 2 Tbsp olive oil (divided)
- 4 tilapia fillets, thawed
- salt and pepper
- 2 red bell peppers, sliced
- 1 onion, thinly sliced
- ½ cup olives, pitted
- ½ cup fresh parsley, chopped
- 2 Tbsp lime juice
- Heat 1 Tbsp of olive oil in large skillet over medium-high heat.
- Season each fish fillet with salt and pepper, then cook until opaque, approximately 4-5 minutes per side.
- In a separate skillet, heat the remaining 1 Tbsp olive oil.
- Saute the peppers and onions, stirring often, until tender, approximately 8-10 minutes.
- Add the olives, ¼ tsp each salt and pepper, parsley, and lime juice to the vegetables, and stir to combine.
- Serve the vegetables over the tilapia.
