Avocado Toast Three Ways

Ingredients
  • 3 slices of your favorite bread
  • 2 Hass avocados
  • Juice from 1 lemon
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper, to taste
  • 1 hardboiled egg, sliced
  • Pinch red pepper flakes
  • Tomato slices
  • 1 slice turkey bacon, cooked
  • 2 tablespoons hummus
  • 1 radicchio leaf
  • Pinch of cooked corn kernels
Instructions
  1. Toast your bread slices. Set aside.
  2. In a small bowl, mash avocado and add lemon juice, olive oil, and salt and pepper to taste.
  3. To assemble: Spread mixed avocado evenly over the three toast slices. Top one with hardboiled egg slices, salt, and red pepper flakes. Top a second avocado toast with tomato slices, pepper, and bacon. Top your third avocado toast with a smear of hummus, radicchio, and corn.
