Ingredients
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 5-ounce package Shiitake mushrooms, sliced
  • 3 celery stalks, diced
  • 1 can tomato and green chilies
  • 3 carrots, peeled and sliced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 2 cups purple cabbage, shredded
  • 3 cups low-sodium V8 Juice
  • 3 cups low-sodium beef broth
  • 1 tablespoon crushed red peeper flakes
  • ¼ cup apple cider vinegar
Instructions
  1. Add all ingredients into a large pot and stir to combine.
  2. Simmer for 5 hours or until vegetables are tender.
Notes
Eat one serving 3 times per day, for 3 consecutive days.
