Cauliflower, Rutabaga, and Parsnips Mash with Mushroom Gravy
 
 
A low carb winter vegetable mash with cauliflower, rutabaga, and parsnips.

Ingredients
  • 1 large rutabaga
  • 3 medium parsnips
  • 1 head cauliflower
  • ½ tbsp fresh garlic
  • 1 jar mushrooms
  • 2 gravy packets
  • 2 tbsp yogurt butter
Instructions
  1. Steam all the vegetables.
  2. Pulse in a food processor or mash with the garlic and yogurt butter until you get the consistency you are looking for.
  3. Make your gravy following the directions on the packet and add your mushrooms.
  4. Ladle gravy over your winter mash and serve alongside lean beef or chicken
