Crock Pot Vegetarian Bean and Cheese Dip

A simple spicy bean dip that's low in sodium, vegetarian, gluten free, and high in protein.

Ingredients
  • 2 cans no salt added pinto beans, blended
  • 1 jalapeƱo, gutted and diced
  • 1 tomato, diced
  • 1 small onion, chopped
  • 1-8 oz can no salt added tomato sauce
  • 1 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 cup mozzarella cheese, shredded
Instructions
  1. Drain beans and mix in a blender or food processor to paste consistency.
  2. Place beans in Crock Pot.
  3. Mix in tomato sauce, spices, and cheese.
  4. Dice vegetables and add to bean mixture and stir.
  5. Simmer in Crock Pot on high for 1 hour or low for 2 hours.
  6. Serve warm with corn tortilla chips.
Notes
To speed up the process, you can use canned vegetarian refried beans instead of blending your own, and salsa instead of fresh vegetables, and heat on the stove top in about 15 minutes.
