Cut four pieces of parchment paper, 8 ½ “ x 5”. Spray four mini loaf pans (approximately 6” x 3 ½”) with non-stick cooking spray and line the bottoms and long sides with the parchment paper, leaving an overhang on the long sides.
Melt the semi-sweet chocolate in the top half of a double boiler set over barely simmering water; divide evenly among your prepared pans. Rap the pans several times on the counter to level the mixture; freeze till hardened.
Melt the white chocolate and divide evenly atop the semi-sweet layer; rap the pans several times on the counter to level the mixture.
Melt the red candy melts and drop spoonfuls atop the white layer. Use a toothpick to swirl the mixture and create a marbleized pattern. Immediately scatter sprinkles across the tops.
Freeze till hardened (about an hour); wrap with cellophane, parchment or waxed paper. Keep chilled till ready to serve.
