Simple Loaded Twice Baked Potatoes

Ingredients
  • 4 tbsp Extra Virgin Olive Oil
  • 4 large baking potatoes
  • Mrs. Dash Garlic & Herb Seasoning
  • 4 tbsp no-salt butter
  • ⅓ cup sour cream
  • ½ cup shredded Monterrey Jack Cheese
  • Optional: bacon and chopped up green onions
Instructions
  1. Preheat oven to 425ºF.
  2. Lay out 4 pieces of tin foil and place one washed and dried potato in each sheet.
  3. Drizzle each potato with the Olive Oil, then sprinkle on some Mrs. Dash Garlic & Herb seasoning mix.
  4. Wrap the potatoes in the foil.
  5. Bake potatoes at 425ºF for an hour and a half.
  6. Remove the potatoes and let them cool enough to handle, about 10 minutes.
  7. Scrape out the inside of the potato and mash in a bowl.
  8. Add butter, sour cream, and shredded cheese into the “mashed” potatoes and mix well.
  9. Heap the seasoned potato skins with the mashed potato mixture, add bacon or green onions if you’d like.
  10. Bake in the oven in a baking dish uncovered at 400ºF for 30 minutes.
