Slow Cooker Pineapple Teriyaki Pork with Pineapple Relish
 
 
Your entire family will go crazy for this easy Crock Pot meal. Inexpensive pork roast is slow cooked with sweet homemade teriyaki sauce, then topped with a fresh and zesty pineapple relish.

Ingredients
  • 1 2-3 lb pork roast
  • ⅓ cup soy sauce
  • 12 oz can of chunk pineapple
  • 1 tsp garlic powder
  • ½ tsp ginger
  • 1 lime
  • 2 tbsp cilantro, finely chopped
  • 2 tbsp green onions, finely chopped
Instructions
  1. For the pork:
  2. Add pork, soy sauce, garlic, and ginger to the Crock Pot.
  3. Pour the juice from the can of pineapple over the pork.
  4. Add about half of the pineapple chunks to the Crock Pot if desired.
  5. Cook on low for 8 hours.
  6. Shred pork with two forks and leave in the Crock Pot to absorb sauce for a minimum of 20 minutes.
  7. For the pineapple relish:
  8. Dice the remaining pineapple into small pieces.
  9. Add the juice of one lime.
  10. Add cilantro, green onions, and a dash of salt and pepper. Mix well.
  11. Serve pork over rice, top with pineapple relish.
Notes
Tip: You can cook instant white rice in the microwave in a Pyrex bowl. It takes about 5 minutes and comes out perfectly every time. No rice stuck to the bottom of the pan!
