Pumpkin Spiced Latte Muffins
 
 
A combination of all your pumpkin favorites collide with these Pumpkin Spiced Latte Muffins. So easy and so delicious.

Ingredients
  • For the Muffins:
  • 1¾ cup All Purpose Flour
  • 1 cup Sugar
  • ½ cup Brown Sugar
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 2 tsp Cinnamon
  • ½ tsp Ground Cloves
  • ¼ tsp Ground Nutmeg
  • 1-15 oz Can of Pumpkin Puree
  • 2 Room-Temperature Eggs
  • 1 tsp Vanilla Extract
  • ½ cup Vegetable Oil
  • For the Latte Glaze:
  • 1 cup Confectioners Sugar
  • 4 tbsp Coffee
Instructions
  1. Preheat the oven to 375ºF.
  2. In a large mixing bowl, whisk together the flour, sugar, brown sugar, baking soda, salt, cinnamon, ground cloves, and ground nutmeg.
  3. In a smaller bowl, whisk together the pumpkin puree, eggs, vanilla extract, and vegetable oil.
  4. Gently combine the pumpkin mixture into the flour mixture, fold with a rubber spatula until it is all smooth.
  5. Spray a muffin pan with non-stick cooking spray and scoop the batter into each slot with an ice cream scooper.
  6. Place in a 375ºF oven for 22-24 minutes, until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then remove from pan and place on a cooling rack. You will want to place the cooling rack on a baking sheet.
  8. To make the latte glaze, add the confectioners sugar in a mixing bowl with the coffee. Whisk until smooth.
  9. Spoon the glaze over each muffin allowing the excess to drip off into the baking sheet. Let set for 5-10 minutes.
