Recipe type: Paleo
Ingredients
  • 2 lbs of bones from a healthy source (a local butcher is a great source)
  • 1 onion
  • 2 carrots
  • 2 stalks of celery
  • 2 tbsp Apple Cider Vinegar
  • Optional:
  • 1 bunch of parsley
  • 1 tbsp of sea salt
  • 1 tsp peppercorns
  • Additional herbs or spices to taste
Instructions
  1. Gather together high quality bones.
  2. Shoot for 2 pounds per gallon of water.
  3. If you are using raw bones, especially beef bones, it improves the flavor to roast them in the oven for 30 minutes at 350ยบ before boiling them.
  4. Place the bones in the pot with the Apple Cider Vinegar and let sit 20 minutes so the acid helps make the nutrients in the bones come out.
  5. Add your vegetables that you have chopped up and any spices.
  6. Bring to a boil then reduce to a simmer.
  7. Simmer Beef Bones for 48 hours
  8. Simmer Chicken Bones for 24 hours.
  9. You can skim the fatty froth off of the top but it will not hurt you.
  10. Strain and place in quart jars in the refrigerator for up to 4 days or freeze.
  11. Drink at least 1 cup per day as a health boost or include in your recipes that require prepared broth.
