Sweet & Sour Chicken: Lower in Sodium

Ingredients
  • For the Sauce:
  • ½ cup low sodium ketchup
  • 1 tsp low sodium soy sauce
  • ⅓ cup white vinegar
  • ½ cup brown sugar
  • ¾ cup pineapple juice
  • 2 tbsp corn starch
  • For the Sweet & Sour Chicken Entrée:
  • 2 lbs chicken tenders cut into cubes
  • ½ cup bread flour
  • ½ cup corn starch
  • 1 tsp pepper
  • 1 tsp Mrs. Dash Garlic & Herb seasoning
  • ½ cup water
  • 1 cup olive oil
  • 1 red bell pepper, cubed
  • 1 cup pineapple chunks
  • white rice cooked according to package instructions
Instructions
  1. To make the Sweet & Sour Sauce:
  2. Mix the corn starch and pineapple juice until fully blended in a sauce pan.
  3. Add in all of the other ingredients and stir thoroughly.
  4. Bring to a boil over medium high heat, stirring regularly, then reduce heat, and simmer until sauce thickens. About 10-15 minutes.
  5. To make the Sweet & Sour Chicken:
  6. Cut chicken into cubes and set aside.
  7. Mix flour, corn starch, and spices in a mixing bowl, then add the water and stir to batter consistency.
  8. Put chicken cubes in the bowl and thoroughly cover with batter.
  9. Heat oil in a large pan on the stovetop.
  10. Fry chicken until cooked thoroughly, turning occasionally. Juices will be clear and chicken coating will be golden brown.
  11. Set aside on a paper towel lined plate.
  12. In the pan, cook the red bell pepper and pineapple chunks for about 5-7 minutes.
  13. Serve chicken and vegetables over white rice with Sweet & Sour Sauce for dipping.
