Recipe type: Pickles
Ingredients
  • 6-8 Pickling Cucumbers, depending on their size
  • ½ quart filtered water
  • 2 tbsp sea salt
  • 1 tbsp dill
  • 2 cloves of garlic
  • 1 tbsp peppercorns
Instructions
  1. Sterilize a quart jar and lid or whatever container works for you.
  2. Combine salt and water and let sit until salt dissolves.
  3. Cut the tips off on both ends. Either keep your pickles whole or cut in halves or quarters.
  4. Add your spices (Peppercorns, Garlic, and Dill) to the brine. Optional spices could be pepper flakes, mustard, horseradish, etc., anything you'd like for added flavor.
  5. Pack your pickles in the jar leaving a little head space.
  6. You're going to now put a small jar or cup into the container so your pickles stay under the water.
  7. Place the container onto a small plate for leakage that can occur when closing.
  8. Put in a dark area of the house and let sit at least three days for a slightly sour pickle, longer if you like them very sour.
  9. Check the pickles daily for scum on top, just use a spoon to remove and check that the pickles stay below the water.
  10. Add more water if necessary due to evaporation.
