Brown Rice and Quinoa Salad

Ingredients
  • 2 Cups Quinoa
  • 2 Cups Brown Rice
  • 2 Cans Tomato and Green Chiles, Undrained
  • 1 Cucumber
  • ½ an Onion
  • ½ Cup Chopped Broccoli
  • Cilantro to Taste
  • Lemon Zest
Instructions
  1. Cook brown rice and quinoa according to package instructions.
  2. Mix the cooled quinoa and brown rice in a large bowl.
  3. Add 2 cans of tomato and green chiles.
  4. Dice your cucumbers and onion.
  5. Finely chop the broccoli.
  6. Chop cilantro.
  7. Mix all together and sprinkle with lemon zest and lemon juice.
