Blackberry Lemon Shrub Drink
 
 
This blackberry lemon shrub is easy to make and can be served with seltzer water or vodka. It's a refreshing way to enjoy the fresh fruit of summer.

Ingredients
  • 1 cup blackberries
  • Zest of 1 lemon
  • 1 cup coconut sugar
  • 1 cup apple cider vinegar
Instructions
  1. In a sauce pan, add your ingredients and bring to a boil.
  2. Lower the heat to a simmer and cook for about 20 minutes.
  3. Mash the fruit as it's cooking to release the juices and stir every once in awhile.
  4. When the mixture becomes thicker, take it off the stove and strain into a jar or bottle.
  5. Refrigerate until ready to use.
  6. To use the syrup:
  7. Start with 2 tablespoons per 8oz glass of seltzer water and adjust according to taste.
  8. Can also add vodka for a refreshing summer cocktail or add olive oil to make a delicious salad dressing.
Notes
Home Chef Tip: Make a large batch of the syrup to store in your refrigerator for use in drinks, cocktails, and salad dressings. Because of the vinegar, this syrup lasts for a week or more in your refrigerator!
