High Protein Low Calorie Turkey Salad
 
 
A high protein, low calorie Turkey Salad to help you meet your nutrition goals this summer.

Ingredients
  • For the Salad:
  • 2 cups chopped romaine lettuce
  • 2 chopped roma tomatoes
  • ¼ cup chopped strawberries
  • ¼ cup chopped papaya
  • ¼ cup chopped cantaloupe
  • ¼ cup chopped red onion
  • ¼ cup chopped green pepper
  • 1 large sweet potato baked, cooled then chopped into bite sized pieces
  • 3 hard boiled eggs sliced and/or chopped
  • 8 slices roasted turkey breast chopped
  • For the Dressing:
  • 1 tbsp EVOO
  • 1 tsp balsamic vinegar
  • Pinch of kosher salt
  • Pepper, to taste
  • ½ tsp Dijon mustard
Instructions
  1. Mix all salad ingredients together and toss to combine.
  2. Whisk dressing ingredients in a small bowl and toss into salad.
  3. Enjoy!
